For my daughter’s party I prepared small brioches with mini chocolate kisses. Kids loved it!
Brioche recipe, (based on a recipe for Pain au lait)
- 1kg bread flour
- 100g sugar
- 10g active dry yeast (approximately a pack, maybe less)
- 400g milk (cold)
- 4 eggs (200g)
- 200g butter
- 18g salt
- semi sweet chocolate mini kisses
- TOTAL: 2Kg
Additional ingredients for flavors:
- lemon zest from 1 lemon
- 100g semi sweet chocolate mini kisses
Place butter at room temperature. Mix flour, sugar, salt, lemon zest, and yeast in a large bowl. Add milk and eggs. Mix until it forms a dough. Knead slowly during 5mins. Add butter all at once and knead until the butter is mixed with the dough (during at least 5 mins). Let dough rest in a container (large enough to let the dough rise twice its original volume) for 1 hour at room temperature. Refrigerate overnight or for at least 6 hours.
Take dough out of the fridge. Cut into 30 pieces of about 60g. Add 6-7 mini kisses before shaping the balls. Place the balls one next to another like hexagon on a baking sheet, leaving enough space (1/4 inch) to let them rise and touch to each other eventually. Store in the oven off or in a place with minimal air flow and let them rise until they double, between 1 and 2 hours. Take them out of the ovenPaint them with egg before baking in the oven. Bake at 375-390F without convection or 350F with convection for 20-25 minutes until the brioche becomes golden on top.
